•When mounting an accelerometer, should I start with flexible or rigid mounting?

If using an accelerometer for the first time then start with a flexible mounting.

Rigid mounting will result in a lot more chassis noise being coupled into the sensor - which is good if chassis noise analysis is the function you wish to perform, but bad if what you require is data suitable for track mapping.
